Make It Don't Buy It: Burritos


We love to make and eat all kinds of burritos in the Maravilla household. They are easy, tasty, inexpensive and healthy. And they involve beans which are a big favorite food of ours! Burrito's are my go to meal item when I need a quick meal or when I make a meal for someone. Here's how we rock the burrito:
  • whole wheat tortillas
  • refried or whole beans (pinto, black or homemade)
Then to the beans you can add any of these:
  • 1 can or 2 small tomoates, chopped small
  • 1/4-1/2 cup carrot, sweet potato or cauliflower puree, or a bit of each
  • 1/2 cup salsa
  • diced onion
  • bbq sauce ( I know how gross it sounds but Christy and I will tell you how yummy these are just squeeze a bit on to the tortilla then top with beans)
Top off with some monterry jack cheese, or leave plain. Bake, broil or freeze (just make sure to wrap individual burritos in foil to keep from getting soggy) depending if you are eating now or later.
