What's For Dinner?


so we are heading into a wonderful weekend, and what makes it wonderful is family time. and a great meal that doesn't take very long to prepare, and can be prepped with a few kids and even a hubby in the midst is definitely a must. the recipe to try this weekend is: beef daube provencal, from cooking light, many years ago. it has been a family favorite of ours for 3 years, and i hope your family will love it too!
after you check out the recipe, here's what i do:

*i double the onions and 1/2 the carrots. my husband doesn't love carrots.
*i add 2 cans of tomatoes, and their tasty juices.
*to "stretch" it out, add a bit more wine, and extra broth.
*crock-pot it, by browning the meat then dumping everything into your crock on low 8 hrs, or high for about 4-ish. perfect for sunday! (can't add too much liquid, use a bit less of broth and wine)
*DO NOT USE THE NOODLES!

if you don't care to use the wine, please substitute cherry juice made by juicy juice. it is almost as addictive! in a pinch, use good quality 100% cranberry juice, but it isn't as good.

kids can peel the carrots, and maybe cut (use your judgement!) and pour measured out ingredients into the pot. to make this a real meal, serve with a loaf of crusty french bread, or your own delicious homemade recipe. the stew, is full of veggies, so you can even skip an extra one and move right onto the fruit. and i think sliced and warmed up pears, cooked in a bit of butter with a sprinkling of cinnamon and nutmeg is perfect.
