We love "roll-ups" at our home. You probably call them wraps. And there are hundreds and thousands of ways to make them.
I thought I would share two kinds that we regularly make--
Ham (or Turkey) and Cream Cheese
Peanut Butter, Honey, Raisins and Sunflower Seeds--
My good friend, Kathryn N. introduced me to this wrap. It makes an excellent breakfast or on-the-go snack as well as a yummy, gooey, sweet lunch.
Like I said, there are many, many ways to make a wrap.
Kathryn also introduced us to another yummy wrap made with refried beans.
Layer:
1 large tortilla
thin layer low-fat cream cheese
thicker layer refried beans
a little salsa
shredded cheddar
Roll up and refrigerate for about an hour so it sets up a bit. You can slice it into pieces or eat it whole.
My personal favorite is a sort of Southwest wrap--
Layer:
1 large tortilla
thin layer of cream cheese that's been mixed with a little taco seasoning
smoked or roasted turkey slices
baby spinach leaves
a few spoonfuls of finely chopped tomatoes, green onion, red pepper
a few spoonfuls of corn and black beans
Roll it all up and eat it. (It's a little messier, but really yummy and healthy.)
Other things you can use:
Fresh, soft goat cheese
thin slices of Jarlsberg, gouda, provolone, cheddar, etc.
mix cream cheese with a little blue cheese
pesto--basil or sun-dried tomato
salad greens
leftover chicken, pork, beef, veggies that have been sliced or chopped
deli-sliced roast beef, salami, pepperoni
fresh herbs--basil works very well
chicken, tuna, or egg salad
chopped, toasted nuts
a little BBQ sauce (works great with leftover chicken)
Make a fruity wrap using plain or fruit flavored cream cheese (or a little jam) and thinly sliced strawberries, crushed pineapple, small wild blueberries, etc.
